Broad Curve Top Edger Cake Smoother
This is used in the same way as the NARROW CURVE, but, as its name suggests, its curve is much broader and therefore creates a more sweeping curve to the top of the cake. Use on the almond paste/marzipan to give a good foundation for the sugarpaste. You may find that it is not necessary to re-use the BROAD CURVE on the sugarpaste, if your foundation is good, the sugarpaste will automatically follow the shape of the almond paste/marzipan. A gentle polish with the SUPER SMOOTHER and SIDE EDGER may be all that is needed.
